Ingredients:
- 800g baby potatoes (or any small waxy potatoes)
- 2 tbsp Broighter Gold Rosemary & Garlic Infused Rapeseed Oil
- Sea salt, to taste
- Freshly ground black pepper
- Optional: fresh rosemary sprigs or a few crushed garlic cloves for extra flavour
Method 1: Oven-Roasted
1. Preheat your oven to 200°C (180°C fan) or 400°F.
2. Prep the potatoes: Wash and halve them. No peeling needed!
3. Toss the potatoes in a large bowl with the infused oil, salt, and pepper.
4. Roast on a baking tray for 35–40 minutes, turning halfway through, until golden and crispy.
5. Optional: Add a few fresh rosemary sprigs or garlic cloves halfway through roasting for extra aroma.
Method 2: Air Fryer
1. Prep the potatoes as above.
2. Toss with Broighter Gold Rosemary & Garlic Oil, salt, and pepper.
3. Air fry at 200°C for 18–22 minutes, shaking halfway through, until golden brown and crisp.
4. Serve immediately with a sprinkle of sea salt.

- Perfect with roast chicken, grilled fish, or veggie mains
- Add a drizzle of extra Rosemary & Garlic oil just before serving for added richness
- Serve with a dollop of garlic aioli or sour cream
