There's something almost magical about the smell of hickory smoke drifting across a garden on a warm evening. We wanted to bottle that feeling - literally. Our Hickory Smoked Rapeseed Oil is cold-pressed from our own rapeseed crops on the farm, then gently infused with natural hickory smoke to create an oil that works as hard at a summer BBQ as it does drizzled over a crisp salad.
At Broighter Gold, everything starts in the fields. Our golden rapeseed is grown, harvested and cold-pressed right here on the Seacoast of Northern Ireland, meaning the oil retains its natural richness, high smoke point and beautiful flavour - the perfect base for something a little more adventurous.
Why hickory smoked rapeseed oil?
Rapeseed oil already has a natural, nutty depth that makes it one of the most versatile cooking oils you can use. Add hickory smoke and suddenly you have a flavour that bridges the gap between kitchen and grill. It's ideal for marinades, dressings, roasting vegetables, and finishing meats - without ever switching on the actual BBQ.
Smoky Honey-Mustard Grilled Chicken Salad
Ingredients
- 3 tbsp Broighter Gold Hickory Smoked Rapeseed Oil
- 2 chicken breasts
- 1 tbsp wholegrain mustard
- 1 tsp local honey
- Mixed summer leaves
- Cherry tomatoes, halved
- Cucumber, ribboned
- Red onion, thinly sliced
- Sea salt & cracked pepper
Method
- Whisk 2 tbsp of the oil with mustard, honey, salt and pepper to make a marinade. Coat chicken and rest for 30 minutes.
- Grill or pan-sear chicken over high heat until cooked through and caramelised. Rest for 5 minutes, then slice.
- Toss salad leaves, tomatoes, cucumber and red onion together.
- Dress with the remaining 1 tbsp of Hickory Smoked Oil, a squeeze of lemon and a pinch of sea salt.
- Top with sliced chicken. Serve immediately.
Beyond the BBQ
