Broighter Gold Lemon Honey & Mustard Dressing

A bright, zesty dressing made with Broighter Gold Lemon Infused Rapeseed Oil — ready in minutes and beautiful drizzled over any salad.

Ingredients

  • 4 tablespoons Broighter Gold Lemon Infused Rapeseed Oil
  • 1 tablespoons wholegrain mustard
  • 1 tablespoons clear local honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoons apple cider vinegar
  • 1 garlic clove, finely grated
  • 0.3 teaspoons sea salt
  • 0.3 teaspoons freshly ground black pepper

Steps

Combine the base: Add 1 tablespoons wholegrain mustard, 1 tablespoons clear local honey, 2 tablespoons fresh lemon juice, 1 teaspoons apple cider vinegar, and 1 garlic clove, finely grated to a small bowl or jar and whisk together until well combined.

Emulsify with the oil: Slowly drizzle in 4 tablespoons Broighter Gold Lemon Infused Rapeseed Oil while whisking continuously, until the dressing is smooth and emulsified. The golden lemon oil will give it a beautiful colour.

Season: Season with 0.3 teaspoons sea salt and 0.3 teaspoons freshly ground black pepper. Taste and adjust - a little more honey if you like it sweeter, a little more lemon juice for extra zing.

Rest & serve: Leave to rest for 5 minutes 05:00 to let the flavours come together, then drizzle generously over your salad. Shake or whisk again if it has been sitting a while.

 

 

Notes

Serving suggestion: Gorgeous over a salad of mixed leaves, toasted walnuts, sliced pear, and crumbled local cheese - a real celebration of Northern Irish produce!

Storage: Keeps in a sealed jar in the fridge for up to 5 days. The Broighter Gold oil may solidify slightly when cold - just bring to room temperature and shake well before using.

 

Gluten-free and suitable for vegetarians. The lemon infused oil does the heavy lifting here - no need for extra lemon zest!
