Bulgar Wheat Salad


  • 8 oz Bulgar wheat or couscous
  • 8 oz boiling water (add a little more if necessary)
  • 8-10 spring onions (chopped)
  • 1 green pepper (de-seeded and chopped)
  • 9 tbsp chopped parsley
  • 2 tbsp chopped mint leaves
  • 3 tbsp lemon juice
  • 6 fl oz rapeseed oil
  • 1 tsp grated lemon peel
  • 1 tsp ground mixed spice
  • ½ tsp ground cumin
  • Salt and pepper


  1. Place Bulgar wheat or couscous in a bowl and pour over the boiling water, cover and stand for 1 ½ hours.
  2. Drain or squeeze out excess water.
  3. Mix the spring onion, green pepper, parsley and mint with the cous cous.
  4. Combine all the dressing ingredients in a screw capped jar and shake well – pour over the couscous and mix well.
