Ingredients:
- 8 oz Bulgar wheat or couscous
- 8 oz boiling water (add a little more if necessary)
- 8-10 spring onions (chopped)
- 1 green pepper (de-seeded and chopped)
- 9 tbsp chopped parsley
- 2 tbsp chopped mint leaves
- 3 tbsp lemon juice
- 6 fl oz rapeseed oil
- 1 tsp grated lemon peel
- 1 tsp ground mixed spice
- ½ tsp ground cumin
- Salt and pepper
Method:
- Place Bulgar wheat or couscous in a bowl and pour over the boiling water, cover and stand for 1 ½ hours.
- Drain or squeeze out excess water.
- Mix the spring onion, green pepper, parsley and mint with the cous cous.
- Combine all the dressing ingredients in a screw capped jar and shake well – pour over the couscous and mix well.
