Recipe:
- 175g self raising flour Gluten Free
- 30g caster sugar
- 1 egg (beaten)
- 160ml buttermilk (any milk will actually do,and less milk will make them thicker)
- 10ml Lemon Broighter gold oil (5ml for the batter, and 5ml to add a little each time for frying)
Add all the ingredients to your bowl, mix well with a hand-mixer if you have one. Leave your mixture to sit for about 5 minutes.
Add a little lemon oil to your medium heat pan, and then drop in your batter. Once the batter starts to bubble on one side, then flip your pancakes over and cook for a about 30 seconds on the other side.
leave your pancakes on a cooling rack until all your mixture is finished. Top off then with the choice of your topping - always syrup for me!
